Vegan Knishes

There is nothing as satisfying and comforting as a fresh knish, perhaps while reading The Knish War On Rivington Street (Amazon link). 

I found this amazing recipe for vegan New York Style Knishes and they are fantastic. The dough is made with oil, vinegar, water, flour, baking powder, and salt. The filling is made from potatoes, oil, onion, vegan butter, salt, and pepper. Once assembled they are brushed with non-dairy milk.

Technique for forming the individual knishes can vary. I prefer the "long tube filled with mashed potatoes" approach. I connected most easily with the technique shown by Ethel Bailkin who lived to be 100 years old, in this video. Another useful video, by CookJewishy, can be found here
